Mashed potatoes are a wonderful comfort food to enjoy in the cold season.  The creamy texture and rich buttery flavor make for a most cozy side dish.  One of the best things about mashed potatoes is that everyone seems to have their own unique recipe that is representative of their heritage, culture, and upbringing.

MITI MITI created a recipe for mashed potatoes that uses some of the most popular Latin American ingredients.  Our recipe uses chipotle peppers, queso blanco, scallions, and our very own Chipotle Table Sauce.  It is an easy dish to prepare and really packs a Latin punch.  We also like to keep the skins on our potatoes because it adds a bit more texture

INGREDIENTS:

2 pounds of Yukon Gold Potatoes, notpPeeled, cut into large pieces

4 Garlic Cloves peeled

1 1/2 cup of shredded Queso Blanco

1/2 cup of Milk

1 cup of MITI MITI CHIPOTLE TABLE SAUCE

1 tablespoon of chopped canned Chipotle Peppers in Adobo Sauce

2 tablespoons of Butter

1/2 cup of chopped Scallions

Salt to taste

INSTRUCTIONS:

Boil potatoes and garlic cloves in a large pot of salted water until potatoes are very tender.  Twenty minutes to twenty-five minutes.

Drain the potatoes and after, place potatoes back in pot.

Mash potatoes with potato masher for approximately one minute.

Immediately add butter, milk, queso blanco, chipotle peppers, scallions, and CHIPOTLE TABLE SAUCE to potatoes and mash.  Do this until queso blanco has melted and the potatoes are smooth in texture.

Season to taste with salt.
